Although Banksia is not a rare botanical, it is a rare that you find it as a single species expression. That is because the big commercial  honey companies, despite the excellent flavour and aroma, are not fans as it is quick to crystallise – not great when you are making mass-produced ‘runny honey’ – so it normally gets heated and blended in.

Our Banksia Honey was collected in late Autumn this year from hives located in the bush on the north-west of Kangaroo Island. This is the first time we have collected and separated out this honey – and we are loving it! Flowering in late summer and autumn the nectar of the silver banksia is a source of food for bees and many of the native animals on Kangaroo Island, including the critically endangered Kangaroo Island Dunnart.

A rich, vibrant honey with malted cookie dough flavour and a toasted caramel, milk chocolate finish. Crystallises quickly to a beautiful, fine, chewy consistency perfect for spreading on waffles, then topped with marscapone.
